Product review: Trader Joe’s Gluten-Free Pumpkin Pancakes

Early this fall I learned that Trade Joe’s had gluten-free pumpkin pancake mix. Now being a sucker for anything pumpkin and not being able to get to Tweet every day, I went and bought two box ( I mean might as well store up for winter). It’s made by Trader Joe’s and sports the catch phrase, “Now you can have your (pan)cake and eat it too!”

I was skeptical but took it home to try for breakfast the next day.

Ease of creation:

Super simple! Anyone who keeps basic items, eggs, butter, and water, around will have no issue

Combine one egg with 2 tablespoons of butter (I prefer unsalted but salted will work).Whisk 1/2 cup plus 2      tablespoons of water into the mixture and add 1 cup of the pancake mix. Mix until combined. Cook in hot pan.

Consistency:

The texture and lightness of this delightful creation is unreal. I don’t remember a regular pancake mix tasting this good let alone one that is gluten-free. It really is a glorious thing to be able to have something that makes you feel special without all the hard work. These are my favorite things to wake up to this fall.

Taste:

Did I mention they are a little piece of heaven on chilly fall days? You need to and get some.

Price:

$4.99 which is par for our food, but it would be better at 3.99. You do get a lot for your buck there’s enough in one box to make pancakes 10 times.
